Summer Tiramisu Recipe - Shinji's Birthday Cake

It's Shinji's birthday tomorrow and his ultimate favourite dessert is tiramisu. I made these individual tiramisu desserts as his birthday cake!







This is a really quick and easy recipe that makes for a cool summer treat! I looked online for different recipes and in the end I customized it to what worked for me. I didn't have cocoa powder so I experimented with mixing in hot chocolate powder directly in to the cream mixture which worked as the sugar as well. Typically the cocoa powder is just sprinkled within each layer but I found this worked great too. I really recommend making these the night before you need them because they really need time to set in my experience. Also I find the individual bowls make for better presentation because I'm terrible at slicing tiramisu without destroying all the layers! Tiramisu Recipe | 4 servingsIngredients:
  • 2 very fresh eggs
  • 250g Mascarpone Cheese
  • 2tbsp Hot Chocolate Powder
  • 8 Lady Finger Biscuits 
  • 1cup Coffee (I don't drink coffee so I just bought a cup of black coffee from Starbucks on the way home from picking up the ingredients)
  • Raspberries & Blackberries or your favourite fruit
  • 4 small bowls or 1 medium bowl
Method:

Separate the yolk and whites of your 2 eggs into two separate bowls. Blend the yolks with the hot chocolate mix and the mascarpone cheese. Then whisk your egg whites separately until they form stiff peaks. Fold the egg white mixture gently into the mascarpone cheese mixture.

Break your biscuits in to the appropriate size for you serving container. Dunk each biscuit for 3 seconds quickly into the coffee while turning it so all sides soak up the coffee. Create the first layer of biscuits in your container and spoon the mascarpone mixture evenly on top. Repeat as many times as needed until you reach the top of your container, finishing with the mascarpone. Decorate with the berries.

Cover with plastic wrap and allow it to set over night in the refrigerator. Because of the raw eggs you want to be careful to always keep the dessert chilled. While I was making the recipe I'd pop the mascarpone mixture in the fridge as I set up for the next step so that it would always remain chilled, just to be on the safe side.

White Oxfords

I love wearing white converse paired with so many different looks. But they can be too casual for work. These Zara white oxfords give the same effect to an outfit but are so much more polished!


Now you may think they look like golf shoes or even bowling shoes, but I still love 'em! I think they're very cool and fun for those casual days!
